I’d like to introduce a group of folks in the health industry. They come from different modalities and backgrounds but have one thing in common: Great Health! I handpicked these professionals because of their varied backgrounds, their professionalism and above all their passion for health.
Amanda Darby is the founder of Confident Cooking, which inspires, empowers, and gives her clients the confidence they need to meet their nutritional goals. Amanda’s approach is in holistic and whole foods cooking and nutrition, encompassing such topics as whole grains, sustainable agriculture, food politics, and much more. Amanda turns to real food instead of pills and supplements to enliven and reenergize your body. Amanda believes working together as a team is of the utmost importance, which is why she uses the term ‘Nutritional Empowerment’ rather than ‘Nutritional Counseling’.
Amanda would describe herself as a foodie first and nutritionist second. She believes finding satisfaction and peace with your eating pattern is equally as important as what you are eating. This means all your favorites foods can be incorporated into a healthy diet and without them, you will be dissatisfied and frustrated with your diet, leading to despair and a ‘who cares’ attitude.
Amanda attained her Bachelors of Arts in Public Health at the University of Washington and her Master of Science in Nutrition from Bastyr University. She spent 5 years working at various restaurants in Seattle and Martha’s Vineyard, specializing in Italian cookery for its ease and flexibility. She has taught Nutrition to culinary students at Seattle Central Community College. In the community she has taught cooking demos at Free and Clear and Pacific Culinary Studio.

Dr. Penaluna’s life as a Chiropractor began when he sustained an injury playing professional rugby in England. At the time he had no idea that an injury would shine such a bright light on his career path. Injuries so often open up opportunities for learning and self-discovery and this phenomenon certainly happened to him. After Chiropractic care helped him heal and return to rugby in record time, it became clear that his calling was to help people heal from illness and injury as well as to coach people towards optimum health, and human potential using Chiropractic as the foundation. He found his way to Seattle, met and married his life partner, Dr. Marisa Delisle, who happened to be a second generation Chiropractor, and together they started two thriving Chiropractic offices in the greater Seattle area. They currently practice together at their main office in Shoreline while raising their daughter, Olivia.
Their mission is to help to create drug free healthy families and communities in the Seattle area. They hope to accomplish this through listening, educating and empowering their clients to find the natural healing power within.

I was in a five car pile up on I-5 and was more than rattled about the experience. You hear about accidents everyday and you think you will react a certain way… It was comforting to have a person who didn’t work for a law firm or an auto insurance carrier to explain what to expect and how to handle it."
